This dark beer is beautifully complex and a fantastic testament to barrel aging. This is Slipstream's third Wild Ale release, meticulously aged for 16 months in oak barrels with a mixed culture of Brettanomyces, Lactobacillus, and Pediococcus. The long maturation allows rich chocolate malt to meet a vibrant, wild tropical funk. The result is a smooth, complex profile featuring notes of chocolate, lemon, and pineapple.
